Slow Cooker Chicken Noodle Soup



This soup is comforting and healthy. It is made in a slow cooker with tender chicken, hearty vegetables, and egg noodles.

Ingredients:

  • 2 lbs boneless, skinless chicken breasts, diced
  • 8 cups chicken broth
  • 4 carrots, sliced
  • 4 celery stalks, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 8 oz egg noodles
  • Fresh parsley, chopped, for garnish

Instructions:

In a slow cooker, combine diced chicken, chicken broth, carrots, celery, onion, garlic, thyme, rosemary, oregano, salt, and pepper

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and vegetables are tender

During the last 30 minutes of cooking, stir in the egg noodles

Once noodles are cooked, taste and adjust seasoning if needed

Serve hot, garnished with fresh parsley
